    Ingrédients                           

    • 1 banane verte                                    
    • 2 carottes                                          
    • 1 morceau de fruit à pain                    
    • 1 morceau de giraumon                      
    • 2 navets                                            
    • 1 igname                                           
    • 1 malanga ou choux dur                      
    • 1 choux vert                                       
    • 1 christophine                                     
    • 1 branche de céleri                             
    • 1 bouquet garni                                  
    • 3 branches d'oignon-pays                    
    • 3 gousses d'ail                                    
    • 1 oignon                                             
    • 1 queue de porc salée                         
    • 300 g de tripes de boeuf                      
    • 1 morceau de poitrine fumée               
    • Huile, sel, poivre                                
    • 200 g de pâte à dombrés                    

    Confection                                                                                                                                               

    Coupez la queue de porc en morceaux, la faire dessaler et la mettre à cuire dans une grande marmite d'eau. Ajoutez les tripes blanchies et coupées en petits morceaux ainsi que la poitrine fumée.                                                                                                                        

    Coupez l'ensemble des légumes en petits dés. Hachez finement les épices et les faire revenir avec l'huile.                                                  

    Ajoutez progressivement tous les légumes, le piment(sans le percer) puis versez les pieds de porc, les tripes et la poitrine fumée au 3/4         cuits ainsi que leur bouillon. Rajoutez de l'eau si nécessaire.                                                                                                                  

    Salez, poivrez et cuire à couvert pendant environ 1 heure. Ajoutez ensuite les dombrés (petites boulettes de pâte).                                      

    Terminez la cuisson 10 minutes. Retirez le
    piment.
